Our First Night to Entertain
Korey and I invited my parents over for dinner on Saturday night. The night's meal included Double Tomato Bruschetta and Lasagna topped off by peanut butter cookies with Reese's PB Cups (my own recipe). I'm looking forward to having many more nights of entertaining!
How to Open a Bottle of Wine
Korey and I were in Denton Friday night for a Christmas party with all of his friends. One of the girls had brought wine but unfortunately the hosts didn't own a corkscrew. So if you ever need to know how to open a bottle of wine without a corkscrew just check out the pics below.

Paninis - It's what's for lunch!
My sister introduced me to a panini press which I bought her last year. It makes those Panera-like sandwiches that you pay $8 for. It is so easy to use and the sandwiches taste so good. Well my sister and I introduced Korey to them and taught him how to make them. We ended up buying one after we got married. So today for lunch we mixed mayo with some basil pesto (purchased at SuperTarget) and spread it on some whole grain bread. Then we topped mine with tomatoes and fontina cheese (again at ST). Korey added pepper jack cheese and ham to his. Then to top it off Korey has been paying attention whenever I have the Food Network on because he "plated" and made it deliciously presentable!

Eureka!!
Korey and I decided to take a trip to Eureka Springs, Arkansas over the past weekend. Neither of us had been there before and we were inspired to go because we had some friends get married at Thorncrown Chapel earlier this year.
Here is Korey in front of our cottage. It was so cute!! There is even a nutcracker sitting in the window.
Downtown Eureka Springs...
Korey and I drove up a road less traveled and I found this. When I looked inside it even had the old benches.
This is the view from the road less traveled.

One Year Ago...
On December 1, 2007 Korey and I had our very first date. Monday night, Dec 1, 2008 was our 1 year dating anniversary. We had our first date at Mi Concina at the Shops on Legacy in Plano and then walked around the pond. We went back to the scene of the crime and as we sat at dinner and talked we couldn't believe all that had happened in one year. We met, started dating, got engaged, started planning a wedding, got married, and now I have to sleep with the fan on in the winter. It's amazing that so much happened in just that amount of time. On our first date we ate dinner and then walked around the pond and sat on a bench and literally talked for hours. On Monday night it was so cold that we quickly walked around the pond, sat on the bench for a minute and then headed for the car!

Kacy's Going Away Party
After we left Houston from our Thanksgiving weekend we drove to Denton so we could see Korey's former roommate, Kacy, before he moved to Atlanta. Here is the Denton gang hanging out with Kacy at Babe's in Sanger.

Korey ordered chicken fried steak which was the size of his plate! This is before he added on mashed potatoes, gravy, green beans and the awesome biscuits!
